Grilled Loin or Rib Lamb Chops

Lamb has a richness of flavor unmatched by beef or pork, with a meaty texture that can be as supple as that of tenderloin. This recipe is a good, easy way to start cooking lamb.

Ingredients
- (6 chops) Lamb Loin Chop
- (2 tablespoons) Extra Virgin Olive Oil
- (1 tablespoon) Parsley - chopped fresh
- (2 teaspoons) Sage
- (2 teaspoons) Thyme
- (2 teaspoons) Rosemary
- (2 teaspoons) Oregano leaves
- (3 cloves) Garlic - minced
Directions
- Combine chopped herbs, garlic and olive oil in a small bowl. Rub the chops with the herb paste. Marinate for at least 20 minutes or up to 1 day in the refrigerator.
- Turn all burners on a gas grill to high, close the lid and heat until very hot, about 15 minutes. Scrape the cooking grate clean with a wire brush; leave one burner on high and turn the other burners down to medium.
- Sprinkle chops with salt and pepper.
- Grill the chops, covered, over the hotter part of the grill, turning them once, until well browned, 4 minutes. (If the chops start to flame, move them to a cooler part of the grill and extinguish the flames with a squirt bottle of water.) Move the chops to the cooler part of the grill and continue grilling, turning once, to the desired doneness, about 6-7 minutes for rare (about 120 degrees on an instant-read thermometer) or about 8-9 minutes for medium (about 130 degrees).
- Remove the chops from the grill and let rest for 5 minutes.
