Smash Burgers

Easy and Delicious. Restaurant quality smash burgers but with better quality beef!
Directions
Ingredients:
1 large onion very thinly sliced (use a mandolin slicer if you have one)
1 pound TVF 100% grass-fed beef divided into 8 equal parts and rolled into small balls
8 slices american cheese (thinly sliced)
4 hamburger buns of your choice
Salt/Pepper/other seasoning of choice (montreal steak seasoning, etc)
Directions:
- Heat olive oil in on flat cooking surface (griddle, large cast-iron skillet, blackstone grill, etc)
- Pile onions into 8 separate piles (use all of them even if it seems like too many). Cook for 2-3 minutes without disturbing until nicely charred
- Place one meat ball on each pile of cooking onions. Using a piece of parchment or waxed paper so as not to stick, smash the meat ball with the back of a flat metal turner. Smash it as thin as you can get it (it will rebound).
- Season with salt and pepper. Cook for additional 5 minutes. Then, flip the onion/burger combo over.
- Cover each patty with cheese slice and grill until melted.
- Assemble two patties on top of each other on buns and cover with your favorite condiments (traditionally smash-burger sauce is a combo of mayo/ketchup/mustard/relish, but you do you!)
