Pork Chops with Chimichurri

A delicious pork chop with a topping of fresh herbs.

Ingredients
- (2 chops) Pork Loin Chops
- (1/2 teaspoon) Salt
- (1/4 teaspoon) Pepper
- (1 tablespoon) Olive Oil
- (1 cup packed) Parsley, fresh
- (1/2 cup) Basil
- (1/2 cup) Cilantro leaves
- (1/2 cup) Mint Leaves
- (3 tablespoons) Red Wine Vinegar
- (3 cloves) Garlic Cloves, minced
- (1/2 teaspoon) Oregano, dried
- (1/4 teaspoon) Crushed Red Pepper Flakes
- (1/8 teaspoon) Salt
- (1/8 teaspoon) Pepper
- (2 tablespoons) Water
- (2 tablespoons) Olive Oil
Directions
- Sprinkle chops with salt and pepper.
- Preheat grill for medium-high heat and lightly oil the grate.
- Cook the pork chops on the preheated grill until no longer pink in the center, 4-5 minutes per side. An instant read thermometer inserted into the center should read 145 degrees F.
- Place the herbs, vinegar, garlic and seasonings in a small food processor; cover and pulse until chopped. Add water; cover and process until blended. While processing, gradually add olive oil into the stream. Serve with the chops
